This simple crockpot cheesy potatoes recipe features real raw potatoes with only 4 ingredients plus salt and pepper. No need for a can of cream of mushroom or chicken soup.
This recipe is easy to make with step-by-step photo instructions. And has a much better texture due to the real potatoes and not overcooking the dairy products.
Don't use the oven space you need for other holiday dishes like Thanksgiving and Christmas. It pairs perfectly with holiday meals like a Small Ribeye Roast Easter ham or Oven Roasted Turkey Breast.

๐จโ๐ณHow to Make Crock Pot Cheesy Potatoes with Real Potatoes
Simple ingredients.
Peel and cube about 1 pound of potatoesโtwo large or three medium russet potatoes. Make the cubes about 1-inch size or smaller.
Coat a large crock pot with PAM cooking spray. You can use a smaller crock pot of down to 3-quart.
Spread evenly and cook on high for about two hours. If you have more than 1 layer, stir 1 hour into cooking. You want an internal temperature of 190ยฐ or more for the potatoes.
Mash the potatoes in the crock pot. Leave a little texture.
Clean and slice six green onions.
Add 1 teaspoon of kosher salt and ยฝ teaspoon of black pepper. Add the sliced green onion, 1 cup of sour cream, and 1 cup of shredded cheddar cheese. Add cooked bacon or other things at this point. Mix until combined, then smooth over the bottom of the crock pot.
Cook for 30 minutes more on high.

- Use the potatoes you want.
- Cook the potatoes to 190ยฐ or more. It may take longer if you need to pile up the potatoes. Also, crock pots can vary, so the potatoes must be fully cooked before mashing. It may take longer than 2 hours.
- If you have more than one layer of potatoes, occasionally stir to help even out the cooking.
- Add 3 strips of cooked chopped-up bacon with the sour cream if you want.

I made this as a breakfast potato dish so I cubed potatoes small. I didn't mash. It cooked faster so I just kept checking it. Awesome! I will also make these for a dinner side dish as the recipe says but adding ranch seasoning mix. THIS IS A KEEPER!

Hi, it sounds & looks delicious. Will I be able to triple or quadruple the recipe for a large family dinner. I would of course use my large crockpot, ( I have 4).

I have not tried it.
My worry would be the direct contact of the potatoes with the bottom of the crock pot may be necessary plus getting up to temp after the mixing.

I doubled the recipe and cooked it in a crock-pot. That worked fine. I used cotija cheese in place of cheddar, and the result was delicious. Original version is also good.

Nope... just a spray of PAM to prevent sticking then the raw potatoes go in. Spread them evenly across the bottom and cook on high for 2 hours. They will cook just fine. I believe in simple...
